Wiper and True Old Twelfth Night II

Old Twelfth Night is our exploration of natural fermentation and the influence of terroir. This 2018 vintage beer uses apple juice and pulp from our own orchard, combined with a traditional farmhouse malt recipe and hopped with Citra. 

It is fermented spontaneously and matured in French red and white wine barrels. The resulting blend is a complex Orchard Ale; with a wild, tannic and tart character accompanying a crisp apple finish.
