Dry Cider. Blend of bittersweets, Dabinett and Chisel Jersey.

Fermented with wine and saison yeasts separately and then blended. Conditioned in a vessel that facilitated the introduction of local wild yeasts and bacteria for six months then finished and matured in a whie wine barrel for a further six months.
