Brewery description
We have a small number of bottles of Sauvin available that were aged in our barrel room. This extended ageing has elevated the beer to a new level of complexity and balance. Sauvin is a blend of a rustic saison and longer aged wild ales (3 up to 5 years) dry-hopped with Nelson Sauvin hops for over a year in one of our Bourgogne foeders.
On the nose, you will come across white wine grapes and melon notes from the Nelson Sauvin hops. Accompanied by dusty, oaky, and citrus aromas from the base beer. In taste, you will experience a slight bitterness and herbal notes like thyme from the hops, a balanced sourness with a fairly dry woody finish.
Our dry-hopped wild ales are very well suited for longer-term ageing (3+ years), but 6-12 months after bottling, the taste will already have evolved. Store our beers upright or lying down in a cool, dark place. Our beers are best enjoyed between 12 and 14 degrees Celsius.
