Saint Mars of the Desert Hop Stingo

Hop Stingo is the latest in our series of sour wood fermented beers. We sent wort to the oak foeder, kept it warm to allow a lactic fermentation, then added a load of dry hops (which inhibit souring) and allowed it to slowly ferment out with all the other lovely friends we have in our foeder. Then it had a secondary fermentation in stainless steel with more hops. Galaxy, Bravo, Idaho 7. Pale, hoppy, zingy and lovely.
