Saint Mars of the Desert Bébé Sauvage

A beer fermented in an oak foeder for over a year, then transferred to rest on dates and plums for three months, then bottle refermented with champagne yeast. Complex, tart/sour, fruity, bottles will contain sediment from both the fruit and the yeast.
