Everything fell into place perfectly around our fifth birthday celebrations. Just as we were putting the plans into place for packaging our anniversary stout Quinquennium, we noticed the 1000th commissioned brew here at Polly’s was fast approaching. Never ones to miss an opportunity to celebrate a landmark achievement, we opened the forum up to our incredible drinkers and fans to throw suggestions our way. Ultimately we settled on the idea of a Triple West Coast IPA; something we’ve never attempted before but agreed that for our 1000th brew we needed to be looking at the past as well as acknowledging our status as a modern day hop-forward brewery. Featuring a 100% classic C-hop lineup, we’ve amplified the bitterness on this beer by adding Comet to the boil for 60 minutes, before adding gentler additions of Cascade and Columbus at the whirlpool stage. With further dry-hop additions to make those resinous grassy notes absolutely pop, here’s to the next thousand.
