Polly's Echo In Time

Working with slight variations on established hop combinations is one of our favourite things to do here at Polly’s HQ. As we work with so many different hops week by week, our brewers love to see how the substitution of one hop for another elevates and accentuates flavour profiles across the board.

We’ve always been huge fans of Spur here at HQ, but what if instead of those silky stonefruit notes, we brought in a whole swag bag full of freshly cut pineapple instead? A salivating substitution it turned out to be and swapping Simcoe for Bru-1 to pair with Azacca and Citra earned our brewers a very much well-deserved pat on the back. Joining those pineapple notes are a fruit salad of mango, papaya orange, and fresh cut grapefruit for a pale ale that is so incredibly moreish.
