Blue Label, a cozily, foamily amber 8.5% pale ale hopped with Cascade and Simcoe. The former, added to the boil, provides citrus fruits, pine resin, rosewater and an elegant bitterness. Simcoe, used primarily as the dry hop, offers notes of orange and passionfruit. Aging in ex-whisky casks on their third usage contributes a subtle, botanical oak leaf quality and the Brettanomyces adds layers of floral depth. Reminiscent of classic West Coast IPAs but with extra layers of funk and wood, it’s simultaneously cockle-warming and highly drinkable. Very delightful.
